hi all i have recently renewed head gasket when pulled plenum chamber off inlet manifold i noticed a lot of oil in it is this normal. and also if the air sencer in manifold is soaked with oil would that cause ecu to be reciving cold air all the time

Replace your PCV valve with a grey one instead of the black one....will help in cutting down on how much oil gets in the plenumn.

If it's the PCV causing all the oil to get in there, replacing it will solve the issue. The engine could also have bad blow by. If you replace the PCV, clean out the inlet manifold & it still oils up, do a compression check.

If the sensor is covered in oil, it is likely it won't be reading correct inlet temps.
