I know that the ED bonnets are slightly different to EB bonnets but i heard you can fit en ED grill to an EB by using 10mm of washers to space the grill, is this true and if so, wont there be a huge gap between both?

The grille area is no different, just the height of the place where it bolts on. The washers correct this, and it should fit fine!

I used bolts with two nylon nuts threaded on.

This allowed me to adjust the grill and then tighten the bolt to the grill and to the bonnet.

Not sure if this makes sense.
