Is there any way to keep all the digital features working in the ghia when running a 351? e.g the fuel range/usage meter etc

Yep...fuel injection. Trouble is the calculations are based on the stock fuel system and therefore injector size so it's unlikely to be correct if you were to use say a 5.0 EECIV.

How were they originally run in the Xf Ghia? Was it from the ECU like in later models or was it like what the VH SLE's had, which was a thingy on the fuel line after the pump & before the carby?

Im not to sure mate, I will have to check with a friend who has the project... The 351 is going to be carby so the fuel injection way wont work, will be mint if it is dont the other way
