the thing is, if i unbolt it from thae cats its probably gonna ge so loud i wont hear the noise anyway

Dunno for sure about the 3V's, but on the BOSS's they drone for a small range around 2000rpm. Even with the factory exhaust.

Yeah you shouldnt need to start it to find out if its the cats that are making the noise. Is it possible to unbolt the factory cats or are they welded onto the exhaust manifold? If there now welded you unbolt the cats on both sides, so that the whole exhaust is seperate from the manifolds and shake it around to see if something is loose inside one of the cats. See the diagram below in the attachment that will show you what i mean. :)
