I was wondering what would be the best thing to use to clean a ABS sensor. I have been told by a mech to use carby cleaner but I am a bit unsure..

I wouldn't use it.

The dust seal on the hub is rubber and carby cleaner breaks down rubber/plastic.

Use degreaser or brake cleaner (less potent) and wash off.

Brake cleaner is best,safe around brake parts and evaporates to nothing in seconds leaving no residue.
