So, I'd be much better off doing it myself than pay $300 for some other asses to do it! The dude said I need something else as well... a hub seal or some kinda seal or something??? I forgot what he said it is. Anyone know? And is there a particular grease to use?

Do it yourself its not to hard. From memory the dba rotors come with grease seals installed, any high temp bearing grease will do i use nulon and maybe new split pins and that should be all you need.

Just make sure you put the seal in the disc rotor properly, In the new bearing kit they should include it. If you are trying to reuse the seal discard it if you damage it. I bought a set of DBA slotted front rotors 2 weeks ago and they dont include grease seals.
Just tap the seal in with a hammer handle ( rubber or wood ) so you dont damage it. If you dont get it in all the way it will make the rotor either sit off balance or it will protrude out but you'd pick that up when refitting the caliper. And dont be stingy on the grease!

I got the new seals and everything to do it, but opened up the box and they reckon I've got to torque them up to 30nm to bed in the bearings then let them off and torque up to 15nm. I don't have a torque wrench so I think I'll be leaving it to the professionals!

Just do them up tight so the rotor is sort of difficult to turn. Run it like that for a week or so, then jack it up and check for play. If theres no play, back the bearing off until there is then adjust so the wheel turns freely but there is no play. Simple.
