Is there are difference in the steering racks?? I know the lines are different, is there meant to be a sensor on the rack of the v8 or just the 6??

Ford lists the Racks as different but I think it is the top housing on the right hand that is the only difference. The Intermediate steering shaft is the same and the rack housing is the same, the actual rack shaft is the same and it appears that the rest is the same. The main thing that is different in EA-EB/ED is that the tie rods changed in 1991 to 16mm diameter, that's about all.

As to the sensor switch, they all have them. :)

At least on EF/L the V8 Rack does not have the pressure switch to bump up the idle.
