I cannot for the life of me find a Tech doco for a ED V8 Auto to manual conversion - ECU not an issue as I am running M800.
Any help?

It's pretty much the same as an I6 conversion. ie remove auto, fit & align clutch, mount gearbox, fit pedal box, attach & adjust cable, re-wire ND switch.
