Hi once again just wondering if the parts from the old 302 windsor parts are interchangeable with the 302 windsor's in the EB/EF/EL/AU

What parts exactly? Some are close but as a rule no.

Blocks are different as the later blocks are roller cam setups.
Stroker kits could well be differnet due to there being a difference in the imbalance between old and new. They are so cheap from Summit in teh US you might as well just buy the correct parts and be done with it.

Just tell them what block you have. Early blocks are 28oz imbalance and 2 piece rear main. Late blocks are 50oz and 1 piece rear main.
You can of course machine an early block for a 1 piece rear main seal.
