I have A 1983 Ford F100 that has been engine swapped with the same year V8 302 but I don't like the 3 on the tree manual transmission and want something like a 4 or 5 speed floor transmission something for get up and go 8-). I'm wanting a car like transmission the truck wont ever pull or haul anything i just want it to go fast any ideas on what kind of transmission will bolt to the bell housing or to the engine i have?

Any smallblock pattern manual trans will fit your cleveland. The trick will be getting a forward shifter position like the effies have. The T56 6 speed and Tremec 3550 type 5 speed have this ability but ain't going to be cheap.
A 4spd toploader is probably the easiest option because the external shifter can be modded to fit and most extension housings have forward bolt holes for the shifter but if not you can make an adapter plate.
It may not be such a problem if you use bucket seats though.
