Just wondering if it's possible to put an AU XR6 Head onto an EL Block?

yes....but in the au head best to use the au cam with the au rockers as the au have a different rocker ratio to suit the au cam.

so long as you use the AU cam and AU rocker gear it bolts straight on. the EF-EL rocker gear has a ratio of 2:0:1 where as the AU has a ratio of 1:8:1
