can you swap a EF diff + entire rear axle to EB just as a straight unbolt bolt in swap ? or is there more to it

yes you can do it.
but the hand brake is different. not sure if the cable will work

Need to swap control arms, park brake cable as well as the lever which needs to be mounted where the EF/EL one is.

As the guys b4 have said, yes it is possible.
Things that need to be looked at and changed,

Control arms
Handbrake cable
Brake line from the master cyl/ abs unit (if fitted) to the diff, as these are different between EB, Ef and EL where/how it connects to the diff.
