I own a BA XR8 5sp ute 2004.
My question is can the seats be swapped from driver side to passenger side
and passenger side to driver side?

As a guess i would say no because the controls will be impeded.

if it's just to swap the better seat cover over ..... you can swap the actual covers but get someone to alter the seatcover stitching where the airbag is so it will work correctly [passenger to drivers & drivers to passenger]. the actual seat frame base cannot be swapped and the airbag mount may need to be changed.
