Guys, connectors arrrived today. More than enough to do the list above. Will take me 3-4 days to make up the cables (a few hours here and there over that time). Should have the units ready to rock early next week.
Once they are ready I'll contact each of you regarding further arrangements early next week.
This'll keep me busy for a while :)

Would happen to be able to get the 60-pin EEC caonnectors? Specifically the loom end (female)?

OK, contacted a bunch of local guys in the automotive connector game as well as a few in the aftermarket ECU business..
It appears that this connector was made by Gray Industries under licence to Ford. Appears not to be a standard connector size. The pins were a standard pin, however, that connector series was discontinued long ago. In, fact, looks like Gray themselves are no more.
None of the local guys have been able to find a source (at a reasonable price, see next paragraph) )and they have all tried long and hard.

There is one crowd I found in the US that has a bunch of connectors left over from a cable loom manufacturer, but, they are asking big $$... like around AU$160-AU$180 for the shell and 60 pins (that includes airmail postage).

You should do what I do....
I get mine from a wrecker, pull it apart, carefully fold out the cable retainer wings, break off the wire, solder a new wire in and then re-crimp the wings back over.... leaves an effective wire connection that fits back into the body.
I use this method for a whole range of automotive connectors (where one cannot get new pins).
