I have a 1997, DL Ford LTD, 5 Litre V8.

It's the version of the Windsor which has a distributor, not a coil pack!

Could anybody please tell me if the EEC-V Engine Management system on this engine has an "Ignition Knock Sensor" or is ignition timing advance set solely by rotating the distrubutor?

I run my car on 98 Octane Unleaded and am wanting to reap the full benefits of the better quality fuel!

No knock sensor.

Rotating the dizzy will advance the base timing, the EEC will just add it's own ignition timing, according to the conditions, on top of that.
