awesome, can't wait to see them! i would got he pinto and get it registeresd first, as you'll have to get the sr engineered, either way it should be heaps of fun! is it a 2 door or 4 door?

You won't fit a nissan gearbox in the standard manual trans tunnel of an escort.

You will need to fit a cortina tunnel. If you have an auto the tunnel should be ok.In my MK2 from factory had a bigger tunnel for some reason.

Auto tunnels are bigger.
The easyest way is to just keep cutting till the gear box fits and then fabricate a new tunnel.
