I have just gone to put my cylinder head on the block with a genuine AU gasket bought from ford and some of the oil return holes don't line up with my EF block and head. Is this normal? as i was told it was common practice to use an AU gasket in older model engines. any help or advice would be greatly appreciated as i dont now what to do from here

As in on the intake manifold side there are no holes in the gasket where there is in the head and block? This is normal, designed to flow oil and coolant elsewhere.
What exactly do you mean "don't line up"

I thought the AU gaskets were NLA from Ford.

I haven't properly seen one yet, but that's probably a B-series gasket.

I think you're right...my MLS gasket didn't look like this...

Mine looked liked this...everything defintely lined up.

I suggest you take it back to where you got it from and request the proper gasket.

I would imagine he got the bottom end cleaned with new pistons...because those pistons are f**k clean compared to what mine were.
