if its the front brakes your referring to, you need a sharp solid object like a chizel or a screwdriver to pry the cap off.
from there, you will have a nut with a clip/split pin arrangement, the latter to hold the nut in place. take it all off and your rotor shold come right out.

the back brakes are easy - make sure handbrake is down, pull caliper/bracket off and gently tap the back of the disc with a hammer (or use a rubber hammer and you can knock it a bit harder).

yep, if the caliper AND the bracket holding the caliper on, have been taken off.
if it does not budge, spray a little wd40 around the 5 studs and the centre hub as they rust up there.
once its off, it will expose the drum setup inside.

You will need DB1473 for the front. There are a LOT of different brand but the better ones are Bendix.
Without knowing what brakes you have? they could be PBR calipers or? Your V.I.N would be very helpful so I can give you a better answer.
These would be okay too but not as good?

These ones too?

These are the Bendix ones, a better buy in my opinion.

I got repco brakes, the box said they were ceramic and they only cost $60. I'll see how they go with dust in the next week, there's a good video on how to change front brake pads by chrisfix on YouTube
